- Preheat oven to 350° F. Line 2 Sheet Pans with Sheet Pan Liners.
- To prepare granola, in a bowl, combine oats, protein blend, spice, and coconut oil. Spread onto 2 Sheet Pans. Bake 15 min. Let cool.
- In 8, 1-cup glasses, alternate layers of granola, lemon curd, and yogurt. You should use about 2⁄3 cup granola, 3 tbsp lemon curd, and 2 tbsp yogurt per glass. Top each glass with 1⁄2 cup fruit, if desired.
If adding fruit on top of the parfait, choose a larger glass to make sure the fruit fits!
